Cinnamon Pecan Apple Cake:

INGREDIENTS ( Cinnamon Pecan Apple Cake ):

  • cup vegetable oil                            250 mL
  • cups white sugar                               500 mL
  • eggs 3
  • 1/4 vanilla                                        7 mL
  • cups flour                                        500 mL
  • 1 tsp.         salt                                             5 mL
  • 1 tsp.         cinnamon                                   5 mL
  • 1 tsp.    baking soda                                                                                            5 mL 3 cups       pared, diced apples                                                              750 mL 1 cup        chopped pecans or walnuts      250 mL

Caramel Topping:

1/2 cup

1 cup

butter or margarine

brown sugar

125 mL

250 mL

1/4 cup milk 60 mL



  1. To make the cake, beat together oil, sugar, eggs and Beat three minutes at medium speed if you are using a mixer, slightly longer if you are beating by hand.
  2. Mix the flour, salt, cinnamon and baking soda and add to the sugar Mix well. Stir in the apples and nuts.
  3. Spread the batter in a greased 9 x 13” (23 x 33 cm) pan and bake at 350°F (180°C) for 1


  1. When the cake is almost finished baking, prepare the Caramel In a heavy saucepan combine the topping ingredients and boil for 3 minutes.
  2. Pour the caramel topping over the hot cake. Let the cake sit for a couple hours before serving.
