PURE ONION SALAD:
INGREDIENTS ( ONION SALAD ):
6 | Spanish onions*, very thinly sliced | 6 |
1/2 cup | vinegar | 125 mL |
1/2 cup | water | 125 mL |
3/4 cup | sugar | 175 mL |
2 tsp. | salt | 10 mL |
1 1/4 cup | mayonnaise or similar salad dressing | 300 mL |
2 tbsp. | celery seed | 30 mL |
INSTRUCTIONS
- Slice the onions very thinly and place them in a plastic or glass
- Combine the vinegar, water, sugar and Mix well to dissolve the sugar and salt. Pour over the onions and mix well. Put a plate on top of the onions and set a weight on it. A plastic bottle of oil or vinegar works well. Let the onions sit on the counter all day – overnight is best.
- Drain the (You will wonder where all the liquid came from!)
- Combine the dressing and celery seed and toss with the Put into a serving bowl and serve.
SERVING SUGGESTION
This is great served with beef or Jalapeño Goose. If there is any left over, pile it on a bun with beef or goose the next day for a super lunch!
NOTE
*We often don’t have Spanish onions, so will use whatever is at hand. Strong onions can be toned down quickly by pouring hot water over the slices (especially if they have been separated into rings), allowed to sit for a while (five minutes will do) and drained – before continuing with the marinade.
