GREEK SALAD BRILLIANCE:
Everyone has a favourite way to prepare a Greek Salad. We like ours very thinly sliced, not chopped. This is great served with fish, lamb, or anything with a tomato sauce. It also makes a delicious lunch when served with crusty rolls or French bread.
INGREDIENTS ( GREEK SALAD )
1/2 | red onion, halved and sliced thinly | 1/2 |
4 | large tomatoes, halved and sliced | 4 |
1 | English cucumber, halved lengthwise, and sliced | 1 |
1 | green pepper, halved and sliced | 1 |
8 | leaves romaine lettuce, torn | 8 |
1 cup | pitted black olives, whole or sliced | 250 mL |
3/4 cup | crumbled feta cheese | 175 mL |
Greek Dressing: |

1 cup | olive oil | 250 mL |
1/2 cup | red wine vinegar | 125 mL |
1 tsp. | salt | 5 mL |
1/4 tsp. | pepper | 1 mL |
1 tsp. | dried oregano | 5 mL |
1 tsp. | dried basil | 5 mL |
2 | small garlic cloves, crushed | 2 |
INSTRUCTIONS
- Prepare the dressing Shake all the dressing ingredients in a jar or mix with a hand blender.
- Marinate the sliced red onion in about 1/2 cup (125 mL) of the dressing while you are preparing the rest of the salad. The longer you let the onions marinate, the milder they will taste.
- Place the remaining ingredients in a large mixing
- Just before serving, add the 1/2 cup (125 mL) of dressing and the onions to the salad. Toss and add extra dressing if Add only enough dressing to lightly coat the salad ingredients. The rest will keep in a glass jar in the refrigerator for weeks.
